Actually, you can record more than two tracks at a time as long as you have an
audio interface that exposes its inputs and outputs. I have an mAudio Delta
1010 that does this, but I’ve only been able to get the drivers to work on XP
and Windows 7.
Another way to record more than two tracks (left and right in a stereo track)
is to build yourself an ASIO build from the Audacity source. I look forward to
having the technical skills to do that someday.
For now I just enjoy the familiarity I’ve gained with the Audacity UI over the
years. One track at a time (with a USB mixer that has 8 different instruments
plugged into it so I can pull up the volume on whatever I want to record).

I do not know the NVDA add-on for Audacity which, incidentally, seems not to be
on the NVDA add-ons page. But you do not need an add-on to record multiple
tracks. Note that you can only record a maximum of two tracks at once and that
has nothing to do with the presence of a screen reader.
