No, Audacity can only record from one device at a time.
On Mac OS X I believe that it is possible to create an agregate device
that combines multiple devices into a single virtual device, but if
you do that you will end up with one stereo track that is a mix of the
USB + the Line In.

To record multiple inputs at the same time to separate track, you need
to use a multi-channel sound card that provides multiple input
channels in one device.

You can export a mix of all tracks, or a mix of any comination of
tracks, or all tracks individually, or any selection of tracks,
Audacity is very versatile with the export options.

The keyboard shortcuts may be customised in Preferences.

I'm not quite sure what you mean.
You can mix the tracks in a project in any way you  like.
The volume level of each track can be set individually, or may be
soloed or muted, and you can adjust the pan position.

If the project is saved as an Audacity Project, you can open it again
later and continue work from where you left off, though the earlier
undo history will no longer be available.
