Ouch!  I have been there and done that, although not on this scale.
One of the things I really dislike about Openbook is that scans are
not really saved until they have been processed with OCR.  I will be
switching to K1000 with my new Windows 8.1 machine when the new
version of k1000 is released later this month.  What I have done in
the past is have a two stage back up process.  Every 10 to 20 pages, I
process the large batch of scans and save the document.  This saved
file is immediately backed up to the cloud using OneDrive.  I have
another program that backs up files every three to four hours to an
external hard drive.  In the event of a major system failure, I
disconnect the external drive and disable the backup program.  If my
key file or files are corrupted, I usually have a functional copy on
the external drive.

The beauty of my system is that the external backup is passive.  After
initial configuration, I don’t need to do anything.  The trouble is
that a few minutes of sighted help is needed when initially
configuring backup profiles.  For this hassle though, I have an extra
layer of protection.
