Try going into the File menu and choose Info.
Tab to Account Settings, press space, then arrow down to Account Settings
again and press enter. Tab until you find a button labeled "change" and
press enter and this should give you the ability to alter things such as
your display name. This is, admittedly, not an intuitive process.

My name isn't John Holcomb, that is my dad. I'm John Holcomb II, and when MS
helped me fix outlook they (like most companies), ignore the II. Even
though they did ask me how to spell my name for the display name.
Anyway I'd like to make my name right on my outgoing messages.
MS accessibility is great, but what they don't do is teach you where to go
to find things. They just do it. I get it, there job is not to teach.
