One thing I did once was to use four mics, two on the top horn and two for the bottom drum. I used two T bars, and positioned the mikes in an Ortf pattern. Meaning, the mics sort of cross over each other, so the capsules are about 6 inches apart and at about 120 degree angles to each other. This gives you a really wide stereo image, and there's no phase cansolation or dropout in the center. I use this technique on drums a lot as well, all you need are the two overheads and a kick and snare mic, and you're rolling.

Jay,

To get a stereo sound out of a Leslie Speaker for a Hammond, you would use two microphones one of which would be assigned to the left side of a stereo track and the other to the right side. If you do not wish to use stereo tracks, you can assign each one to a separate track. You do not necessarily want to place the Mike's exactly opposite each other or they may faze cancel each other out. You can experiment with mic placement until you get a natural sound.
