Depending on your equipment and setup, I would focus on an audio only platform,
or one that doesn't include video. This would allow for more bandwidth and
would give you better audio quality even on a slow connection.
Chat platforms like facetime, skype, google voice or what's app among many
others could be used for this purpose.

Please give more details, are you trying to record video and audio? Audio only?
Do you have hardware available to patch in external sources?
There are quite a few options and ways to accomplish this, it all depends on
what you have available and your experience in using.

I am interviewing people for a podcast but can't do it face to face now so I am
exploring althernative options. I tried Zoom but the quality is not as good as
