The UF80 is the VX80 without the control surface.

I've never seen an UF80. The key, action, and case are supposed to be the same
as the VX80, which should be very good quality.

The VX has motorized faders and a built-in USB audio interface. It also has an
expansion bay that can accept a Firewire audio interface and a MIDI synth
module (so that you have some basic sounds to play without a computer). The
controllers are extensive, too. Besides motorized faders, several groups of
assignable knobs, and buttons, it includes drum pads and a ribbon controller.
With the great keyboard and heavy construction, it really seemed to me to be
the deluxe keyboard controller, about as much like a real synth as keyboard
controllers came. At the time, though, I felt like it would take a lot of work
to get it to integrate with Sonar, at least in terms of all of the programmable
controllers. Sadly, that's the story with pretty much every piece of controller
gear, though. Pro Tools and Logic do a much better job at automagically
configurating themselves with controllers. I wish that Cakewalk would, once and
for all, throw some real weight behind getting things going with ACT, or else
that Roland would help push some larger industry-wide initiative.
Computer-based production really needs a standard for assigning/mapping
physical controls to virtual controls.

The UF series should be great, though. Take off all of the bells and whistles,
and just get a great quality control keyboard in a sturdy housing. And, add to
that there really aren't too many good 88 key MIDI controllers left, unless you
buy used.

I've never heard of the UF80. Does it have assignable knobs and faders? How
much is it?

I have the UF80 and like it a lot. Very easy to use without vision.
