Perhaps we should drop the anyboot tool and solely use xorriso?
I'm still trying to grok their documentation (really is terrible),
but it sounds like it should be able to produce a USB bootable ISO with
 both MBR and UEFI support...

 That's not really a thing.  Linux distros use a tool called isohybrid to
 make iso's bootable as hdd images (aka, flash drives) .  our anyboot works
 a lot like isohybrid (but with Haiku in mind and a lot more compact)
