voice memo needs to be the artist as far as I can tell.
Here's an m4a I created for you to look at:

Hooked my iPhone up via USB iTunes opened.
Found the playlist radio button. Checked it. Voice memos  in music table is the 
very last item at the end of the list. 
Then found the table where the recordings were held.

There were four items/recordings this is for my braille music lesson.
Highlighted them all opened the get info dialog CMD I
Tagged the following edit boxes note: didn't check the check boxes afterwards 
that were present before or after the edit fields.
All done in the info tab
Boxes I filled in were:
Artist
Crotchets and Minims
Album Artist
Crotchets and Minims
Album was filled in with Voice memos (possibility that this check box wasn't 
checked?( now wondering if checked this would of changed the default location.
proceeding:
Genre combo box wasn't checked. again, wondering if check this would of changed 
location didn't change the status because I assumed that because it was already 
check the files would go in the correct place.
Hit the ok button.
Finally before converting the files, I wrote in the track numbers because I 
only had four recordings so I did this individually for each file.
Then highlighted all with CMD A VO context menu moved down to convert to MP3.
What happened?
After all that, I got a newly created folder called Crotchets and Minims in my 
music fouldor. What on earth am I doing wrong?
I'm not getting it. :(
