You can go into Mail preferences and in the General pane, change the popup
menu for new mail notifications to VIPs only. This should prevent that. You
can go into System preferences and disable all notifications for Mail in
Notification Center preferences as well as an alternative. I just did the
first option.

I think you have to VO-command-space on the Reminders notification and
then use the menu to select the option to open or show the reminder. At
least, I think this is how it works now in Big Sur if it’s similar to the
other notifications.
