So the thing is that core count is important. A quad core I5 will be faster
than a dual core I7 especially for virtualized applications. While a basic 13
inch Macbook pro with a dual core I5 and 8 GB of memory will run virtualized
applications if you want to run a bunch in parallel or more intensive
applications then go with a quad core. Also store the volumes on as fast a
storage medium as possible. I run my virtual images now on the internal SSD
since I’ve upgraded to the one terabyte model and it’s very zippy even with
more than one OS running at a time.
So you can get away with a little but more is better if you can afford it in
the budget.
Good luck

I am running on a machine with 2 cores, 8 gigs of ram, and that's about it.
It runs fine. I have 1 gig allocated to windows. The thing you might run into
is the key delay and there is now no way to fix that no matter how much ram you
have.
