Lol I just took a look at pages… man is it slow at booting up lol. Well as for the color of the text I would suggest that you highlight something, and press cmd b to bring up fonts, then something like font actions it is a pop-up-button on the bottom row of buttons of the window, and there is a color option in that menu.
