It’s just like using the web except for the blank button labels.  you interact 
with the list of books once they have been either downloaded or imported from 
iTunes which only has to be done once.  You cannot get ibooks through iTunes 
any more that is now handled by iBooks.  open a book when voiceover is on it 
with command-o if it is downloaded it will open and you can than interact with 
it.
Reading is easy, interact with the book proper and begin reading as you would 
any web page contiguously from beginning or wherever to the end of the book and 
the same controls apply.
You can also label the buttons but the labels may not stick.
