Maybe you are holding down the space bar and not pressing option hard enough?
I have my siri configured this way as well, and what I found was that I had to
hold down both option and space together, wait for the ding sound, then talk to
Siri. Let the keys go after you talk, you will hear the same sound as you do
on the i phone after you are done talking.
