i would start by looking up how many strings there are on that
instrument, what notes are commonly played on that instrument, etc.
i.e. figure out what is comfortable or typical for a bouzouki player
to play, and write partsthat fit. it's the same thing as writing
appropriate parts for any other instrument, once you know what range
of notes they typically play.
