The only definite way is by voice. The Fish Crow's call is a very nasal sounding "car" as opposed the typical "cah" or "caw" of the American Crow. The Fish Crow also gives a diagnostic two-syllabled "uh-uh" call. Young American Crows also sometimes sound nasal but there is a definite difference in the two calls. With experience in comparing the two species together you can detect subtle differences in the wing cadence, size, etc. to the point where you can say "that is probably a Fish Crow" but the only safe way to separate the two species in the field is by voice. I'd recommend getting a recording (cassette or CD) with the two species on it. There are also probably some websites out there with sound bytes on them where you can compare the two species.
