Maureen,
You go to the address book on the message menu. The quick key sequence is:
alt+h+a+b.
Press control+home to go to the top of the dialog. The default contact
folder is showing there. Use the arrow keys to move between the contact
folders until you see the one you want.
It's worth getting to know this dialog for a variety of purposes to do with
managing and using contacts.

Here is how to do it:
1. Open a new message in Outlook.
2. Then open the ribbon with the left alt key.
3. Press the right arrow key to move to the options menu and press down
arrow.
4. Then press tab to move along the option ribbon to "Show fields"; 5. The
first option available in my case is "BCC field". Press enter to select
this.
Now the BCC field should be showing in the new message and all future
messages.
Note that this is not the same as opening Options in the file menu. That
option is not available once you open a new message so you should be OK.
You say that the addresses which you have used in previous emails are being
suggested but not the unused contacts. The suggested contacts function comes
from the Address Book. You will need to have your contacts in the active
address book for Outlook to autofill them on a keystroke match. In other
words, if the email address is in your Address Book, Outlook will try to
complete them when a match is found from the moment you start typing. If you
shift tab a few times you will see the address book near the top of the
screen showing which address book you are currently using. If you have more
than one address book, you will need to select the address book you want
before typing the email address.
