I use Windows, so I can't give you specific advice. But I have heard
that VoiceOver support in MS Office for Mac was abysmal until the
recent release of Office 2016. I'm sure you could get an upgrade
through Trinity's Disability Support Services.
And I don't know about swipe gestures on the trackpad. But I'm pretty
sure the Mac has sticcky keys. In other words, instead of having to
press Ctrl+V together to paste some text, you can press Ctrl and then
press V to achieve the same effect.
Press the Shift key five times to turn on sticky keys. For more on
