Hi Victor, concerning autotune plugins, there was a post recently on this list by Tyler saying that they were using the Autotalent plugin. Perhaps they could give you some more details. With regards to panning. If you are using shift+p to open the pan dialog for a track, then this only affects the pan of the focussed track, and works independently of what tracks are selected. In contrast, if you apply an effect from the effects menu, then they are applied to the selected audio, and so you can change more than one track at the same time.
