Reading this makes me feel annoyed with whoever wrote the Bookshare
submission policy pages. I've been using keep exact view and its
huge files for no good reason other than the page said to do it for
books I want to submit. My scans are over tripple the size since I
started doing it, and now I find I didn't even have to at all. Girhrhrhrhr!

Keep Exact View, means only that OB stores the scanned image of the page. It'll attempt to highlight the words on the page for users who that is helpful for. Unfortunately, you can't do anything like rerecognize that page with different settings, as Kurzweil can do.
