I go to Replace, hit the down arrow to make Special appear, and scroll up to 
put em dash into the replace space. Then I hit the hyphen, or dash, twice and 
replace all. I make sure there are no spaces on either side, because I 
understand you readers don't want the spaces, and besides, they aren't in the 
books, usually.
