I hate the giblets, maybe that is one reason I don't like gravy that much,
those bits of liver and such just don't do anything for me.

Use dry packaged gravy mix.  It works well.  Just use the broth and 
drippings (broth can be canned or made yourself from the giblets which are 
in plastic bag inside of turkey.  Just cover them with a couple of cups of 
water and put in a carrot and celery stalk and cook covered for about an 
hour.)  The gravy mix works great and tastes just like homemade with the 
broth and drippings.
