HI Jen, I haven't read the K1000 updated manual, but there are settings for table recognition in both recognition settings and reading settings. Are both instances enabled for you? Also, if I remember correctly, column recognition is supposed to be disabled when scanning tables. If you're scanning a textbook that is printed in columns I certainly see how that would be a problem. I don't have any answers, unfortunately, but you could play with the various table reading settings and see if they make a difference in what kind of results you get.
