Because the greater-than symbol is discussed in the manual as a garbage
character (as it can certainly be) I had the impression that the converter
couldn't handle it if it was legitimate so I'm glad to hear I can leave it
alone when it is legitimate.
As to page numbers, I always do them manually and never leave them to the
converter so I suppose they should be OK as is. They're at the bottom of the
page and I always erase them from there and put them at the top. It's a lot
of work to do that but it makes using the book dependable for the electronic
user.
Let's all convene in Cancun some year; it's a great place to visit during
the cold winter months in the U.S.

If I'm reading this correctly, are the actual page numbers for chapter 1 as
follows: 1-1, 1-2, 1-3 and so forth? If so, I don't think Bookshare's file
conversion tools will correctly find those as page numbers. I suspect this
is something you'll have to ask Amanda to help with on how to do it.
However, if they are just 1, 2, 3, 4 and then the next chapter starts over
with 1, 2, 3, 4, the software conversion tool will correctly find them and
leave them as they are. You will, however, have to total up the pages
yourself to correctly fill in the field when you submit a proofread book
that asks how many pages are in the book.
On the > symbol, it should be just fine as is. You can leave it alone as it
it's supposed to be there like that.

Of course we discussed Bookshare! This is the Monica who just wrote a note
of condolence to Valerie. Incidentally, as a blind user I appreciate the
book Moon Cancun and the Mexican Riviera which I downloaded from Bookshare.
In it I discovered one excellent restaurant and a German bakery in Playa del
Carmen! Before my Bookshare days (before 2010) I would travel as a passive
participant with my sighted partner picking out where we should go. With
Bookshare I am an active member of the team! Thank you Boookshare!
