Brian, this depends on your equipment and your ears.Sometimes with cheaper equipment, better converters are used for 48K and above, so switching to a higher sampling rate might make things sound a little better. But, if you don't hear a difference, it's not worth it.
Of course, if you're working with 48K or above audio, don't resample down to 44.1K until the end, before you go burning things on CD or sending them off to be put on CD. resampling and dithering to 16 bits is always the last step.
