As for breath noises, ok, we have the ability to edit out every single inhale or exhale, mouth noise, saliva click etc. But should we? Do we want things to sound inhuman and unnatural?
I usually try for a compromise when mixing, leaving some breaths in, say, before key phrases or high emotion points in the song. You can always reduce breaths and other sounds a few dB so they are still perceived, but don't draw attention to themselves.
