What I do is to image the whole drive, and then increments after that. I 
haven't tried it for partial volumes, but I'm pretty sure it will do that, 
as well.

For the partial automatic backups of files and folders, with archiving of 
several levels of revisioning, I use Caddais Backup on Demand. Once set up, 
it will monitor all the files that have changed and do a backup as often as 
you like, completely in the background and to any volume, whether on the 
computer, on external media, or an off-site locations.

Does it only do whole drive images though?  My thought is to have
something for folders as well.  For instance, my drive for projects also
has albums, my dimension pro samples, etc.  I don't really need to back
up the dimension pro stuff since I can always just reinstall it from the
DVDs.  But I do want to incrementally back up my projects and albums,
let's say.  I'll definitely check it out though, it sounds good.
