Maybe you're using a different dialog than I? I get at my
information by using the file menu and then info (Alt-f-i).
Then I Shift-Tab to get to the page tabs and right arrow to
get to the second page. Then I need to turn on the JAWS
cursor to read that dialog and get the number of bars,
systems, and pages.
This always reports the total number of pages, even if there
is only one bar on the last page. In fact I use this as a
way to get my lead sheets down to a single page; keep on
messing with the staff size and other stuff until my page
count drops from 2 to 1.

Yeah, thaat's why I found it quite mysterious because there
weren't hidden
or empty bars in my score, but perhaps they aren't reported
in the score
info dialog unless it's a total page.
