One way to handle this is to place your cursor in front of the acronym and
type Alt + 1 and then place your cursor after the acronym and type Alt + 2.
This tells Duxbury that the material in between these two codes is Grade 1.
There is probably a better way to do it, but this will work.

Hi

I'm still coming to grips with UeB, but should Duxbury be translating the
acronym NZCCS with a middle C (dots 2 5? What style or code would I need to
apply either in Word or in the DXP file to make it translate correctly. I
know I can do it manually but not sure if this rendering is correct in UEB
or if there is a technically correct way of telling Duxbury this is an
acronym.
