Thanks Stuart, I should've said that I checked the App Store ,and they show up
as open; confirming that they are already downloaded. My problem is, as I can't
get to the icons themselves, I can't create new folders! For instance, I would
like to create a folder with my AIB and Revolut apps.
Question: would there be any risk in
uninstalling these two apps, and re-downloading them. Am I right in thinking I
should then be able to log in with my existing login details? I imagine once
downloaded, I could then create a folder?

Have you checked the App Store to see if they are downloaded on your phone.
If you search for one of the apps you should find an open button if you have
it downloaded, if not you should find a redownload it should then appear in
the App Library.
The only other idea I can think of is that you may have some homepages
hidden, but I think this may be unlikely because the apps should still be in
the App Library as well.
