I've been looking over this and looks like one device will use any GPS
system it's capable of unless there is a way to lock to a particular
one.
On Android according to this article
https://www.euspa.europa.eu/newsroom/news/galileo-inside-your-phone you
can use GPS test app which will show you if any Galileo satellites are
being used to establish your location. The app is not very accessible.

I can't find something similar for iOS, but one must be out there.
