Hello Tony,for your purpose the trike seems fine. Just keep the freight's CoG low and built the wheelbase long enough to avoid FWheel slip. I always loved the design of Gavin Katts' Trithon (see picture) which is reconvertible into a bike.
Steering any mid-steered bike or trike is done quite intuitively by feet. The seat/back serves as a counter bearing ("Widerlager" in German). This is as intuitive as walking around a corner and thus easy to learn on a trike were one doesn't have to worry about equilibrium. A handlebar is not really necessary but helps.
