Hi Mike,
to create a torrent file, download utorrent from http://www.utorrent.com.
press command N mack or control N windows.
Follow the steps to add files, choose your announce URL and other torrent
options.
To learn a bit about trackerless torrents, read this thread on the utorrent
forums.
