Yes, you can do this with audio recording. Depending on what package you
choose, it can be very simple or very complicated. Some of it means playing
around with alsa and the like to get things sorted. It's been a while since I
tried this so I'm a little hazy on the details. Not sure how much processing a
pi can do so I don't want to suggest something as heavy as audacity. Look at
aplay and a record. These are already installed on raspbian and probably
ubuntu. Also check out sox.

May sound somewhat silly, but, among other things, me and a connection

fancy, but, main thing at moment is relatively cheap, simple to work
with hardware, etc.
In other words, was wondering how it might work with regards to
combination of maybe something like an instance of Mike's talking
raspbian implementation, along with something like an external USB audio
adapter, which at least has a microphone socket - the same one that I
used to get ubuntu mate image operating with orca talking - and then
using something simple/small in terms of interface, etc. to handle audio
recording in whatever format?
As in, could always take the resulting audio clip files and convert them
into other formats, etc. later on, but, just wondering if you guys might
have any ideas about this?
Stay well, and TIA
