Another thing is the current supported main branch of raspbion is 32 bit where
as debion defaults as 64 bit. They do that on raspbion so you can run it on
all the PI boards without change. You definitely can compile your own debion
for Raspberry pi but it takes kernel compiling knowledge and more time than
most people want to spend.

As I understand it, Raspberry Pi OS, formerly Raspbian is essentially Debian
with just a few tweaks to optimize it for the Pi and a custom skin for LXDE if
you go for the version pre-loaded with a desktop environment.
That said, as far as I know, there are no images, official or otherwise, for
installing vanilla Debian without the Raspberry Pi Foundation's customizations
on a Pi, and while I'm pretty sure there is a generic ARM edition of Debian, I
don't know how one might go about installing it to a Pi, assuming it can be
done.
