The two I have managed to use with both command line audio recording,
using arecord, and, with the ubuntu mate on it's own, as well as Mike's
combined image are pretty cheap ones that specifically state on
packaging that they're compatible with windows, mac and linux, and, are
pretty much generic/driverless.
The behaviour you're getting sounds pretty similar to what occurred when
just trying to use the internal audio with ubuntu mate - hardware
overload, so, it sounds like it's just reverting to trying to work with
the internal adapter.
If, from the command line, you type in something like the following
command, it should list all audio devices it has recogtnised:
arecord -l
