What about google docs for the raspberry pi?
Honestly, I can't use it, and last time I checked it didn't work with
the Braille display. Braille is a requirement for this project.
I'm guessing the inability to refresh as you type is a limitation of nano...
Do you think Emacs might work better for this?

I'm not even sure there's a debian/raspbian package for google docs, but
they do what you want. I'm guessing the inability to refresh as you type is
a limitation of nano which I'm not sure has been updated since I got my
first linux box in 2004 or so.
