To freeze a synth, you select the audio and midi track of the synth all the way
through, then apply the freze synth function.

I wonder, how would I freeze individual MIDI Tracks from a softsynth? Is it
the same as the "Freeze Synth" option? Or is that "Freeze Track"? I'm confused!

If you freze it you dont need to bounce.

I assume you ultimately bounce the softsynth tracks before exporting?

No. freezing and bouncing are different.

When you say "I don't even freeze a softsynth until I'm done, because I
might decide to change an eq or effect on a particular instrument," are you
using the term freeze synonymously with the bounce to track command?
