If you change the first displayed page number to 1, that should fix your header problem. You can create your own template with the page number permanently set that way, and if you use your template to open a new document, you won't have to worry about changing the settings for individual documents.

To create a template, open a new document using the default template. Change the page numbering so that the first displayed page number is 1. Then go to the Document Menu and select Create Template. When asked to save your template, give it a meaningful name and click OK. You can then quit your document without saving it.

You can stop all page numbering with the code [svpnp0:0]. The first 0 suppresses page numbering on odd pages, while the second 0 does the same for even pages. To turn it back on, use [svpnp2:2]. Incidentally, this code controls the position of page numbers, depending on the number you specify. See DBTW Help for more details.
