Depends on how your ISP is configured. It's possible you're only
getting three years worth of email, because that's all that's on the server.
For what it's worth, any mail client should be able to access the imap
mailboxes on the ISP, and show all the existing messages. Imap is a
protocol, (like ftp or http), it doesn't handle the messages directly,
only gives you access to them, it's the ISP that controls the messages
on the server, so if it doesn't keep messages beyond a certain point,
then the only client that will have them is the one you had originally
when those messages were sent, because mail clients tend to keep offline
copies of emails, unless configured not to.

pine/alpine can handle folders. I've never used mutt, but I've used
pine/alpine for many years, and except for the text interface, there's
nothing the graphical clients do that pine cannot. It's a fully
featured modern mail client, and can even handle imap mailboxes if so
desired. For pop3 email boxes, you'll need a transport agent like
getpop or something similar. I've only retrieved email via a pop mail
retriever once, and that was several years ago, so I don't know what's
out there to do the job now, but if imap is all you want, pine/alpine
can handle that just fine.
