Thanks for the info that would explain why I'm having difficulties then, well
at least I know it's not a human error on my part, for once! Hahaha.
Ok, looks like I'll have to download Jessey from the raspberry site and then
add the speech myself then. I've done a google search but can't find anything
online about how to add the console speech. Is this anything you could help
with?

There are known compatibility issues trying to run images built for
the Pi 2 on a Pi 3, and as far as I know, there haven't been any Pi 3
compatible images posted on the Raspberry VI website. You may have to
either wait for a Pi 3-compatible image to be posted or download an
image from The Raspberry Pi Foundation and use ssh to manually setup
console speech.
