Sean,
As an alternative how about selecting all the text in the email and
pasting it into a text msg. With Voiceover you will need to use the
rotor to get to the "Edit" feature then Swipe up and down to get to
Select All and Paste.
Note: Though you can send quite large text messages these days from a
billing perspective one text message is a max of 160 characters. So just
over at 200 characters that would cost you 2 text messages.
Another option would be to use the Webtext facility from your mobile
service provider, these tend to be free however I'm not sure how
accessible these services are.

It seems that you have only to put the phone number in the address field!
Try this:
Click "Forward" which you will find after clicking on "More" at the bottom of
the open message.
Swipe down to Forward and double tap.
Type +353 and the rest of the mobile number without the leading 0.
Click send.
That should do it.

She does have an email address (at least from which the email was sent,
however obscure it may be).
If you try to reply to the message, where does it want to go? (You could find
that out by hitting Reply and then reading down a few lines. You can Escape
again if you don't want to actually reply.)
With JAWS on the PC, there is a way that usually works, or one through which
the email address can be deduced (or 'redacted').
So with JAWS running on the computer, you enter the message whose originator
you want to find, and then press the keys alt+1 twice. That'll give you the
original contact's address (or the string which includes the original
contact's address within it).
