This is the default behaviour. The onscreen keyboard is cancelled when you use
a Bluetooth keyboard. I am curious to know why you could not find the "@" sign.
It usually exists where the double quotes is not! By this I mean, normally, the
double quotes is found with shift+2 and then the "@" is found above the
apostrophe i.e. shift+apostrophe. Sometimes, and frequently I find this with
bluetooth keyboards, they swap around and the "@" suddenly appears when I press
shift+2. In that case, I know that the double quotes is now under
shift+apostrophe.
Does this sound familiar?

Hi all,
Just wondering when you are connected to and using a bluetooth keyboard on the
iPhone can you switch to the phone keyboard in the middle of typing a text or
email? For example, the other day I was sending an email using the bluetooth
keyboard but as I couldn't find the @ symbol I wanted to type it in from the
phone keyboard but when I double tapped on the address or tried to type the
phone keyboard wasen't showing up. When I turned off the bluetooth keyboard I
was able use the phone one. Is this normal as it would be nice to be able
alternate between the 2 keyboards at times.
