There are exceptions which probably prove Chris’ rule, ie. Rickenbacher guitars
like my 12-string which has a stereo out jack, but it seems to require a no
longer and hard to obtain DI-box..., and my Mackie mixers all have single 1/4
inch stereo inputs...

Just a suggestion. That's what I had to do here with a single microphone and

press the interleave button on each audio track to set everything to mono,
