Hi,
I bought another late 2012 Mac Mini, I have 6 of these machines here doing
various tasks, 2 manager my servers and 2 are machines I use for archiving
audio.
Obviously the late 2012 Mac Mini machine isn't made any longer but parts for
this machine still seem to be in plentiful supply, the hard drive and memory
for example.
If performance is what you want out of one of these machines then I advise you
buy one with at least a Fusion drive or - if you can get one - a model with a
SSD drived.
If you can only get a machine with a standard Hard Drive then have this
upgraded to a SSD, the increase in performance as a result is absolutely
amazing as I saw myself this morning when I installed OS Catalina and started
installing further applications.
If you use a standard Hard Drive in a Mac like this then performance will be
flakey and the machine may be sluggish at times, this may not be a concern if
you're using the machine for server activity etc.
Of course the current Mac Mini model leaves the Late 2012 Mac Mini machines
we're discussing here smoking in the dust when it comes to performance however
a 2020 Mac Mini in its basic configuration is twice the price and in some ways
isn't as flexible as the 2012 model, doesn't have audio-in and audio-out -
analog and digital - built-in to the machine for example.
Anyway good luck.

No doubt about that.
I received the machine today and booted it up to find that the boot-up process
took around 10 seconds with the latest Catalina OS.

Absolutely, SSD drives are drastically faster than mechanical drives or hybrid
drives. Some things will be similar if they were stored in the memory portion
/ cache but when you go all SSD it’s optimized and considering there’s no
moving parts they scream as far as speed is concerned.

Yes, this should arrive next week.
I have several of these wonderful machines in residents here in various parts
of the house performing different tasks.
I have 2 server machines which have 2 1TB hard drives in them and I
have 3 other machines with 1TB hard drives plus a 128GB SSD Drive (Fusion
drives in other words) The machine I’m expecting next week has a 1TB SSD
drive so to the obvious question I guess, should I expect to see any
performance gains from a machine with a dedicated SSD drive over a machine
with a Fusion drive?
