Okay so for another question if you don’t mind.
I’m considering turning this new machine into a dedicated Plex Media Server so
can I add another hard drive internally or is that only for Mac Server machines.

I think you’ll be surprised how much difference it can make. Now Fusion
drives should be faster than regular rotating because of the caches involved
etc but still you should see a definite bump in disk access speed.

Will be interesting to compare how this Mac mini machine with its dedicated
SSD will perform compared to my 2017 iMac machines and 2019 Macbook.

Absolutely, SSD drives are drastically faster than mechanical drives or
hybrid drives. Some things will be similar if they were stored in the
memory portion / cache but when you go all SSD it’s optimized and
considering there’s no moving parts they scream as far as speed is
concerned.

Yes, this should arrive next week.
I have several of these wonderful machines in residents here in various
parts of the house performing different tasks.
I have 2 server machines which have 2 1TB hard drives in them and I
have 3 other machines with 1TB hard drives plus a 128GB SSD Drive (Fusion
drives in other words) The machine I’m expecting next week has a 1TB SSD
drive so to the obvious question I guess, should I expect to see any
performance gains from a machine with a dedicated SSD drive over a machine
with a Fusion drive?
