Yes, use raspi-config to determine where the audio comes from. I think the
setting is under pereferals.

I think it can wait.
What I'm trying to do is
to have all (and I mean all) audio come out the headphone jack and still
have a monitor hooked up as my wife will be using this pi as well as me.
The monitor doesn't have speakers but it is an HDMI monitor, is this even
possible?
