Hi, unfortunatelly I didn't have any chance to try tig welding, but I have a MAG welder and I have no problem to weld steel pipes with wall thickness as thin as 0.8mm. My first welding project was a bicycle trailer and I did it after 5 minutes of training, not sure I would be able to do that with brazing. You need to be able to SEE the temperature of the steel and you need to braze in one go. With a welder you can fix everything in position with some dots and have a look if everything is correct. It's also not so easy to heat up bigger parts with a normal gas torch. Professional bicycle builders use a Oxy-fuel welding torch for brazing and most of the time they use TIG welding anyway.
