Hi,
A few things.
1. Please see the after-sight.org web page. It has a design of a machine that
uses the raspberry pi with an internal battery. It is for the vOICe but it
should work for your note taker.
2. There is a very cool commandline daisy player which I have got working with
the pi but I cannot remember its name. It was made by someone in the
Netherlands.
3. I vote for using fenrir as a screen reader because it runs in user space.
4. We can use nano as an editor.
5. As for e-mail, I do not know if there are commandline or text mode e-mail
clients that can handle encrypted connections and HTML e-mail.
6. Lynx still works but is a pain to use.
I suggest you do the following.
1. Stick to the raspberry pi 3.
2. Come up with a script that pulls in a software bundle of choice on to the pi
or any other Linux computer such as the Odroid. You can build your own image and
perhaps charge say $10 for it so that you begin to get some cash flowing.
3. Once you have something concrete, work on creating the hardware design.
4. Release your first version.
5. Move to the GUI if necessary.
6. Release the second version of the machine.
