Ahh, the dreaded Red Light Syndrome.

This affects musicians and vocal performers as soon as the recording light comes on. I used to have this problem too. I could perform live in front of a thousand people without a worry yet couldn't relax in a recording environment.
I can only speak for myself on this one.
1: Let the artist go through the song from start to finish a few times before recording to allow them to relax and warm up. 2: I felt better when I heard that Elvis once did over 64 takes of one song and they never released it. Just knowing that the biggest star in the World sometimes struggled made me not feel so bad. 3: Reassure the artist that the only take that matters is the one that sounds great , the rest are just binned and never heard again. 4: if it's a pitching issue, just remind the Artist that they perform well live so they need to concentrate on the words and allow natural instinct to guide the pitch. 5: You just need to keep recording several takes before listening back and maybe try have an ok take as a quiet guide track as there's nothing like competing against yourself. 6: Finally, just keep recording, recording and recording or else the red syndrome will never go away.

Guess what I was doing Friday and will be doing again on Monday? The recordings will be ready once they are right! It's as simple as that!
